Look at the crust colour, since pale bread has usually been underbaked to maximise yield. Squeeze a pastry lightly to see whether butter transfers to your fingers, which indicates real lamination rather than a fat coating.
Try the plainest thing on the counter. A white loaf, a scone or a custard tart has nowhere to hide, and a bakery that makes those beautifully is almost certainly making everything else well. Calderdale offers enough genuine choice that the plain test is a pleasure rather than a chore.
